Good Eats Arise Out of a Year of Turmoil

Agent Scott Brady Supports Local Business Owners with Unique Locations for New Business Endeavors

Last year hit many hard, especially restaurants. Through tumultuous times, some were able to grow and expand their businesses. Those that stayed afloat or excelled during the pandemic either scrambled and updated their technology capabilities or implemented more robust “for pick-up” services.  Local business owners and brothers Rick, Ryan, and Rob Timmons have been in the restaurant business for about 16 years, operating Sonic Drive-Ins in Utah and Idaho, as well as CoreLife Eatery locations; they went out on a limb and started not one, but two restaurants despite the year of turmoil.

Spurred by their success in managing national chain restaurants, they started brainstorming the ultimate taco, one that breaks the mold of the traditional Mexican style. Their scratch-made tortillas pair well with various types of street flavors from around the world, which brought their idea of a “freestyle” taco restaurant called ROCTACO.

ROCTACO opened this February in a unique location of downtown Salt Lake City in the unique location of 248 S. Edison St. where Mountain West Commercial’s Agent Scott Brady helped broker. “The Timmons are one of those secrets that you want to keep for yourself, they are just that good. Rick’s fluid-like personality and drive for bringing unique business concepts to our market are what is going to make tenants like ROCTACO and Flake Pie Co. staples in the industry. It was a pleasure supporting these gentlemen in their business goals,” said Brady.

After launching ROCTACO their spirit of entrepreneurship didn’t stop there. Flake Pie Co. emerged very quickly (within 100 days) out of a conversation that took place last year during the Covid-19 pandemic. The conversation was around how the pie should be a bigger part of the dessert scene in Utah. They went to work creating individual-sized, gourmet pies (sweet and savory) and Flakies (their gourmet spin on the traditional toaster pastry).  The Timmons’ successfully opened Flake Pie Co. in South Jordan in November of 2020. They plan on opening more locations soon for all to enjoy.

“I have worked with Scott for about 5 years, he has been instrumental in helping us across all of our brands.  For ROCTACO specifically, we were looking for an original location with character and Scott helped us look at many sites until we came across Edison Street which we think is perfect for the brand,” said Rick Timmons.

“We are currently working on location number two for both brands that will be in St. George and Scott is helping us identify location three for Flake Pie Co. My advice for people seeking space, is to work with a professional like Scott at Mountain West Commercial, who knows the market, and specializes in the type of space that you are looking for,” said Timmons.
